In the south of Italy the farmers have a privilege that the other Italian farmers don’t have: they are allowed to water their trees. That is being done carefully, with an ingenious systems of tubes, hoses and pipes the watering is being done from above, along the trunk of the tree. That way, a minimum of water is lost evaporating, and the olives, leaves and trees are not damaged.
Extra Virgin Olive Oil: Al Basilico
Farmer: Maurizio Cortese
Production region: The coastal area Bisceglie
Altitude: 50-350m above sea level
Variety of olives: Ogliarola and Coratina
Harvesting technique: Hand Picked
Harvesting period: From the beginning of November untill the end of December
A very nice side benefit is that delivers a wet soil, that is loved by the local basil variety. It did not take Maurizio long to add one and one, and make this basil oil for us.
The olives for this basil oil are being picked by hand, and during the pressing the basil is added. The oil mixes automatically with the etheric oil of the basil. Fabulous idea if you ask us.
